So I have been transitioning to eating high carb low fat for different reasons that I can talk about if you guys want me to. here i want to tell one of the food about Brown Rice Pasta Salad Bowl.
I am obviously still a Vegan and I don’t think that will ever change. I was just super curious about raw till 4, and I researched a bit and stumbled upon high carb low fat.
BROWN RICE PASTA SALAD BOWL
I already have the book 80/10/10 waiting in my shelf, and I have been following many hclf advocates on instagram and youtube. I will now add the tag HCLF as a category for my recipes so that you guys can find them quicker if you eat this way.
I want to open up my recipes to as many audiences as possible, so that more people can try recipes that suit their lifestyle but that are also Vegan.
I just came back for an amazing run in Central Park, New York is so freaking sunny today, and it feels like summer. I was doing some sit ups, push ups etc. on Sheep Meadow and then ran home, ready to devour this lunch.
Sweet potato and Avocado are in my opinion the perfect combination, and they are so creamy that I did not even need a sauce.
I know that many hclf Vegans don’t eat Avocado, and this recipe might be considered high fat in their book, but there are no oils or anything in this and the Avocado is kind of my little portion of fat.
You know, the 10%. And its still high carb. I really hope you enjoy this recipe & if you live in New York, the sun too!
- 1 cup cooked Brown Rice Quinoa Pasta (Trader Joe’s)
- 1 cup steamed and mashed Sweet potato
- 1/2 Avocado
- 1 medium carrot
- 1 handful of spinac
- 1 thick-ish slice of onion
- 2 tbsp soy sauce
- Juice of half a lemon
- Himalayan Salt
- Black ground pepper
Start by steaming your sweet potatoes. I use a Bamboo Steamer that I ordered off of Amazon. Its amazing, and I’ve been using it for 3 years. Once they’re steamed just mash them up. I always eat them with skin.
For your carrot, you just want to wash it and then grate it up and set it aside in a little bowl. You cut your onion into super small pieces and you mash up your half avocado.
Then You Put the Pasta in your Bowl, the sweet potato mash, then your carrot, your spinach and your onion. Of course you can put it in how you like. I kind of deconstructed it and then when it was time to eat went crazy mixing the shit out of it.
Take your half lemon and squeeze it juice over the wonder bowl.
I went a bit crazy with the photos, I just thought my little work station looked so pretty.
Then you can add your Soy Sauce (mine was reduced sodium from Trader Joe’s), your black ground pepper and your Himalayan Salt.
Ignore the Wasabi dressing on the left of my little assembly, I thought I would pour that over it, but the bowl tasted so amazing on its own due to the creaminess of the sweet potato and avocado and the juicy crisp of the onion that it did not need a thing. I didn’t even add that much sauce or spices to be honest. The Lemon does it all.
I just could not stop taking pictures… The colors… I mean…
I have to stop or I will start crying over how beautiful this looks and how amazing it tasted.
